so who doesn't like a perfectly cooked steak?
I've been practicing how to cook steaks for a while and now found a perfect method to make one.
There are two musts, a thick steak (double cut is preferable) and a pan/skillet that can be baked in the stove (iron skillet is preferred)

So to start out, I usually buy the steaks from costco because the steaks at costco are cheap, good, and thickly cut. Comparing prices with places like safeway (butcher isn't very good, steaks are too thin) or whole foods (please rape my wallet, I always want to pay $20+/lb for beef...), costco is the best to buy from, although most packages have 2-4 steaks in them.

To start off, take the steak out and pat dry with the paper towel. This is necessary unless you like oil flying out of the pan onto your face and/or shirt. Also the moisture doesn't tend to sear the steak very well. After drying, I'd recommend two pinches of salt on both sides as well as freshly cracked pepper on both sides. If I feel like it, I also rub a bit of garlic powder.

Heat the pan/skillet on the stove. Add your high smoking temp oil (canola, grapeseed, sunflower, peanut, etc) onto the pan until it starts to smoke. Don't use extra virgin olive oil since it has a much lower smoking point. See chart here: http://en.wikipedia.org/wiki/Smoke_point
Also preheat your oven to 350 deg.

This is the trick for thick cut steaks (~2") This won't work for thinly cut steaks (< 1") since they will be cooked too much.
get a timer out. cook one side of the steak for 2 min. flip. 2 more min. put in oven for 2 more min. take out and plate. let sit for a few min (5 should be good enough).
no fiddling around with your meat thermometer. works like a charm. every time!

enjoy your perfectly cooked medium rare steak.

I'm going to *try* and post more useful information than just listing where I ate it.
As some of you know, I started to cook at home for a while now, so I'll post my recipes and/or others and my sucesses and failures (mostly failures)

To start off, I'll post a few recipes of braised short ribs.
Here's the 3 main ones I use with some varations:

The commonality between these dishes are:
short ribs (duh)
beef stock for simmering
red wine : I just use the cheapest cab at the market
veggies and herbs in the beef stock

Allow about 1 hour from starting of prep to simmering the ribs.
I haven't done this in the oven, I've always simmered on the stove, so I'm not sure if there's much of a difference in quality.
Wait about 2-3 hours until the meat is so tender it falls off the bones and fork and melts in your mouth.
This is an easy introductory dish since
1) it tastes awesome
2) it's hard to screw it up
3) it's to prepare
4) it tastes awesome (did I mention it tastes awesome)

So the company that I work for just had layoffs today. I was a bit worried I would be one of the 6.5%, but I'm still there unscathed. Now hopefully the darn stock price would go up. It was at an all-time high of almost 40 last year, but now it's around 10....

On a side note, I'll do a write up on my NYC trip soon since a certain someone was complaining about my lack of depth on my posts :p
